They say breakfast is the most important meal of the day, however for some reason people always seem to have bland breakfasts.
So I created these easy and delicious breakfast muffins (ok so they are basically just omelettes in muffin cases, but they seem to taste so much better) that are super quick and easy to make – you can also have them cold as a snack!

All you need is:

  • 2 eggs
  • 3 baby tomatoes
  • Slice of red pepper
  • Spring onion
  • Cheese
  • Milk
  1. In a jug combine all the ingredients, ensuring they’re cut up into small cubes
  2. Oil a muffin tray ready to put the mixture into
  3. Pour the mixture into the muffin tray trying to keep them all around the same size
  4. Allow to bake on a medium heat for 10 minutes.

Enjoy hot or leave to cool.
